Who is coffee suitable for: This coffee is very suitable for lovers of softer aromas and tastes. There are no big fads or unusual things in it that we don't normally associate with coffee, but are found in special fermentations. Its nice but at the same time delicate aroma and nice mild acidity and sweetness predestined it for frequent drinking.
This coffee comes from z farmy in the San Pedro area of Inza. arvey rojas has been growing coffee for 11 years on his small farm of 1.5 hectares with 7,000 trees. Arvey is not a member of Asorcafe, but supplies his coffee to this organization because he gets paid better here.
Traditionally, the coffee is fully washed and after harvesting it is pulped and fermented for 20-40 hours, depending on local conditions. The coffee is then washed and unripened and dried on raised beds in parabolic dryers for 8-15 days, depending on the weather.
Asorcafe is an association of coffee producers founded on July 11, 2003 in the town of Pedegral in Inza. Currently, the association has 290 members. Its aim is to help these producers organize the sale of their coffee as a specialty and to provide a framework and structure to improve their education and progress, with the aim of improving economic and social conditions for themselves, their families and the community.
Siruma, our partners in Colombia, started working with Asorcafe in 2021 after establishing initial contact. Asorcafe delivers coffee samples to Siruma where they are assessed for quality and ensure that the physical parameters meet our standards for moisture, yield and coffee quality. Then the coffee is delivered to Siruma's warehouse in Manizales and Asorcafe immediately pays for the coffee.
